About this recipe:This moist Turkish cake is packed full of orangy goodness and is gluten-free. Whole oranges are simmered until tender, blitzed with eggs, sugar, lemon juice, baking powder and ground almonds, before being baked to perfection.
4 large oranges
200g caster sugar
2 tablespoons lemon juice
1 teaspoon baking powder
280g ground almonds

Preheat oven to 180 C / Gas 4.
Cover oranges with cold water in saucepan. Bring to the boil and simmer for 1 hour. Drain and leave until completely cold. Cut into quaters remove seeds and process in a food processor to a pulp. Add eggs, sugar and lemon juice. Process for 1 minute then add baking powder and ground almonds. Pulse to mix.
Pour into a well-greased round cake tin. Bake in preheated oven for 50-60 minutes or until golden.
To serve, top with orange liqueur or dust with icing sugar and orange zest.
Didn't have enough ground almonds so used 190 g quick cook polenta grain and 90 g ground almonds. Reckon that 1/2 amount would be fine in 6"or 7" round tin. Finished it with simple choc ganache. Kept moist for ages. Great and easy recipe - 02 May 2015
