Christmas Chocolate Log

    This no-bake dessert is so quick and easy to make, it's unbelievable. Chocolate digestives are held together and covered with whipped cream. Enjoy as an alternative to the traditional Christmas log.

    Serves: 6 

    • 250g plain chocolate digestives
    • 300ml cream
    • 1 teaspoon unsweetened cocoa powder
    • 2 tablespoons icing sugar

    1. Put the sugar, cream and cocoa in a bowl. Beat cream until it is slightly stiff.
    2. Roll out a piece of foil big enough to wrap the whole log.
    3. To make the roll, stick the biscuits together with cream. Put them together, one behind the other to make a long roll. This should use about half the cream and it is easiest if you do this straight onto the foil.
    4. Wrap the biscuit roll in foil and place in the fridge overnight. Cover the bowl of cream with cling film and refrigerate also.
    5. The next day, unwrap the roll, place it on a serving plate and spread the rest of the cream over it making sure the entire log is covered right down to the serving plate. (Don't do the underneath)
    6. Make a bark effect on the log by scraping with a fork. If you like, you can decorate with icing sugar snow and a sprig of plastic holly.
    7. Keep the log refrigerated until ready to serve. When you are ready to serve, cut small slices on an angle because this log is very rich.
