    About this recipe: This breakfast is highly nutritious and packed full of fibre and protein. It tastes like a fruity porridge. Oats and dried fruit are soaked in juice, then blended with nuts, fresh fruit, yoghurt and honey.

    Ingredients
    Serves: 2 

    • 100g porridge oats
    • 50g oat bran
    • 4 tablespoons wheatgerm
    • 4 tablespoons chopped mixed nuts
    • 4 tablespoons mixed dried fruit
    • 125ml fruit juice or milk
    • 1 small green apple, grated
    • fresh fruit, diced
    • 4 tablespoons natural yoghurt
    • honey as needed

    Method
    Prep:2hr  ›  Extra time:2hr soaking  ›  Ready in:4hr 

    1. Cover oats, oat bran, wheatgerm and dried fruit with just enough fruit juice in a bowl. Let sit for at least 2 hours (or overnight).
    2. Toss nuts, fresh fruit, grated apple and yoghurt into bowl and mix well. Add a little more juice to get the right consistency. Sweeten with honey.
