Vegetarian sausage pizza

    This is a quick way of getting your pizza fix. It's easy to make and tastes delicious. If you can't get your hands on Lebanese bread, use a few pitta breads.

    Serves: 2 

    • 1 large Lebanese bread for the base
    • 100g soya cheese or to taste
    • 1/2 (25g) pack fresh basil
    • 4 tablespoons tomato puree
    • 1 vegetarian sausage
    • 10 cherry tomatoes
    • 5 large mushrooms
    • 2 tablespoons pine nuts
    • salt and pepper to taste

    1. Preheat oven to 180 C / Gas 4. Chop cherry tomatoes into halves, slice sausage and the mushrooms.
    2. Spread the tomato puree evenly around the Lebanese bread base. Then place tomatoes, sausage, basil and mushrooms onto the base.
    3. Thinly slice the soy cheese into pieces. Sprinkle pine nuts and season with a sprinkle of salt and pepper. Bake in preheated oven for 15 minutes.


    Lebanese bread can be purchased in Lebanese or Mediterranean speciality shops. Alternatively, you can use any large/small flat breads (such as pittas).
