Easy Spinach Quiche

    A simple quiche recipe without the pastry - just spinach, spring onions and two cheeses. Perfect for a last minute brunch.

    Serves: 8 

    • 300g (10 oz) frozen chopped spinach, thawed
    • 1 bunch spring onions, finely chopped
    • 4 eggs, beaten
    • 450g (16 oz) cottage cheese
    • 225g (8 oz) grated Cheddar cheese

    1. Preheat oven to 160 C / Gas mark 3. Lightly grease a 23cm pie or quiche dish.
    2. Place spinach in a small saucepan. Cook over medium heat, stirring occasionally until soft. Drain off any remaining liquid. Stir in spring onions, eggs, cottage cheese and cheddar cheese. Pour mixture into prepared dish.
    3. Bake uncovered in preheated oven for 45 to 60 minutes, until eggs are set.

    This is great. My husband told me I outdid myself on this one. But squeeze liquid out of spinach, or it will come out when baking.  -  15 Sep 2008


    Used different ingredients. I looked at all the diffrent suggestions and just went for it with this recipe. I used Ricotta instead of cottage cheese. Since it was before pay day, I mixed and matched diffrent cheeses till I reached the said amount. I put it in a shop bought roll out pastry, and added a few cooked rashers of bacon in the mix, and WOW was it good. Great basic recipe to mix and match. I loved it!  -  15 Sep 2008


    Made it healthier. This was my first time making quiche. I found this recipe to be very easy. I also used low fat cottage cheese and low fat cheese instead and it was still very good.  -  15 Sep 2008
