About this recipe:A fantastic salad that's packed full of vegetables, flavour and protein. Celery is tossed with lettuce, carrots, olives, sauteed green beans and sauteed mushrooms, then served with pan-fried eggs and drizzled with soy sauce.
1 stick celery, thinly sliced
3-4 leaves romaine lettuce, chopped
1 carrot, shaved with a vegetable peeler
5-8 green beans, topped, tailed and chopped
4 small mushrooms, peeled and chopped
1 handful olives
soy sauce, to drizzle
butter or oil, as needed

Place celery, lettuce, carrot and olives into a salad bowl.
Heat frying pan with butter or oil and saute mushrooms and green beans for a few minutes. Place into the salad bowl.
Add a little more butter or oil to the frying pan and cook the eggs.
Toss salad, then top with fried eggs and drizzle with soy sauce. Enjoy!
