Warm egg salad

    A fantastic salad that's packed full of vegetables, flavour and protein. Celery is tossed with lettuce, carrots, olives, sauteed green beans and sauteed mushrooms, then served with pan-fried eggs and drizzled with soy sauce.

    Serves: 2 

    • 1 stick celery, thinly sliced
    • 3-4 leaves romaine lettuce, chopped
    • 1 carrot, shaved with a vegetable peeler
    • 5-8 green beans, topped, tailed and chopped
    • 4 small mushrooms, peeled and chopped
    • 1 handful olives
    • soy sauce, to drizzle
    • butter or oil, as needed
    • 2 eggs

    1. Place celery, lettuce, carrot and olives into a salad bowl.
    2. Heat frying pan with butter or oil and saute mushrooms and green beans for a few minutes. Place into the salad bowl.
    3. Add a little more butter or oil to the frying pan and cook the eggs.
    4. Toss salad, then top with fried eggs and drizzle with soy sauce. Enjoy!
