About this recipe: These sweet treats are perfect for Christmastime. Wrap them in pretty paper and tie a festive ribbon around them. They are creamy, fruity, crunchy and delicious. Enjoy as is or with a cup of tea or coffee.


Serves: 12 

  • 250g coconut oil
  • 100g crispy puffed rice cereal, such as Rice Krispies
  • 90g icing sugar, sifted
  • 125g milk powder
  • 165g mixed dried fruit, finely chopped
  • 100g glace cherries, finely chopped

  1. In a large stainless steel bowl, combine rice cereal, icing sugar, milk powder and dried fruit.
  2. Melt coconut oil slowly over low heat, cool slightly.
  3. Pour coconut oil into dry ingredients and mix well.
  4. Working quickly, spoon the mixture into paper muffin cases or press into a greased tin.
  5. Freeze until set, about 15 minutes, then store in refrigerator.
  6. To serve, cut into fingers if pressed onto tray and top with chopped red cherries.


Coconut oil is a white semi-solid fat at room temperature and a clear liquid when heated. You can purchase it in health shops or online. Alternatively, you can use vegetable shortening, such as Crisco or Trex, if desired.
