    About this recipe: This foolproof egg dish is quick and easy to make. It's also extremely versatile. Beaten eggs are mixed with cheese, garlic and bacon, then microwaved twice.

    Ingredients
    Serves: 1 

    • 2-3 eggs, beaten
    • 1 handful mature Cheddar cheese, grated
    • 1 teaspoon crushed garlic
    • bacon pieces to taste
    • freshly ground sea salt and black pepper to taste

    Method
    Prep:5min  ›  Cook:3min  ›  Ready in:8min 

    1. In a tall microwave-proof jug, mix together the eggs, cheese, garlic and bacon.
    2. Microwave on HIGH for 1 minute, remove from the microwave. You will notice that it will be partly cooked and hot on top.
    3. Mix very well, then microwave on HIGH for 2 minutes. Your eggs should be ready. Serve immediately with salt and pepper.

    Tips

    Do not add milk to the mixture, it will make it very sloppy and watery.
    Do not add salt and pepper before microwaving. This will make the eggs rubbery.

    The recipe doesn't state this, but II'm assuming that the bacon was supposed to be cooked (well, I cooked mine). I like the idea of a quick scrambling of eggs in the microwave, but I think what you need to keep in mind is the power of your microwave. The recipe says to cook 1 minute, stir, and cook an additional 2 minutes. Mine were completely overcooked at 2 minutes and ended up dry and rubbery. In the future, I will first check the eggs at 30 seconds because I suspect that a full minute may be enough for 2 eggs in my microwave. Garnished mine with some additional crisp bacon and some chopped tomato. Be cautious about your timing, check on the eggs early, and you should be fine. Putting aside the timing issue, my 4-star rating is based on the flavor of the scrambled eggs...they were good! - 10 Feb 2015
