    About this recipe: These eggs are perfect for breakfast, brunch, lunch or dinner. They are hearty and quick and easy to make. Eggs are scrambled with bacon, peppers, onion, tomatoes and mushrooms.

    Ingredients
    Serves: 2 

    • 1 tablespoon oil
    • 2 rashers bacon, diced
    • 1/2 red pepper, diced
    • 1/2 green pepper, diced
    • 1 onion, diced
    • 4 mushrooms, diced (optional)
    • salt and pepper to taste
    • 1 tomato, diced
    • 4-6 eggs, beaten
    • 1 dash milk

    Method
    Prep:10min  ›  Cook:15min  ›  Ready in:25min 

    1. Heat 1 tablespoon oil in a frying pan. Cook bacon and peppers, onion and mushrooms over high heat. Season with salt and pepper.
    2. When the vegetables have softened, add diced tomato. Stir for 1 minute. Lower heat to medium.
    3. Add the eggs and milk to the pan, stir constantly so the eggs do not stick. Serve hot.
