Ingredients

1 tablespoon oil
2 rashers bacon, diced
1/2 red pepper, diced
1/2 green pepper, diced
1 onion, diced
4 mushrooms, diced (optional)
salt and pepper to taste
1 tomato, diced
4-6 eggs, beaten
1 dash milk

Heat 1 tablespoon oil in a frying pan. Cook bacon and peppers, onion and mushrooms over high heat. Season with salt and pepper.
When the vegetables have softened, add diced tomato. Stir for 1 minute. Lower heat to medium.
Add the eggs and milk to the pan, stir constantly so the eggs do not stick. Serve hot.
