Creamy potato bake

    This potato dish is a little like a potato gratin, but so much easier to make. Thinly sliced potatoes are layered with seasoned soured cream, topped with Cheddar cheese and baked to perfection.

    Makes: 4 - 6

    • 6 medium potatoes, scrubbed and thinly sliced (skin left on)
    • 250-300ml soured cream
    • 1 (40g) packet French onion soup mix
    • 125g grated matured Cheddar cheese

    1. Preheat oven to 200 C / Gas 6. Generously grease a baking dish.
    2. Mix together the soured cream and French onion soup mix in a bowl until well combined.
    3. Layer potatoes and soured cream mixture in prepared dish, starting with potatoes on the bottom. Continue until everything has been used up. Top with cheese.
    4. Bake in preheated oven for 1 hour or until potatoes are soft and tender.


    1. Add 100g chopped spring onions to the soured cream.
    2. Add bacon bits or ham in between the layers.
    3. Add vegetables in between the layers, such as onion, sweet potato or pumpkin.

    Altered ingredient amounts. I found that my French Onion Soup Mix was 6 months out of date and rock solid, so, having already opened the sour cream, I added a generous helping of Herb and Garlic Seasoning and a bit of cornflour for thickening. I didn't have enough potatoes so I used slices of Kent Pumpkin, potato and onion rings. Worked out delicious  -  12 Mar 2010  (Review from Allrecipes AU | NZ)

    Made this dish to go with a bbq last night. Thought there wasn't going to be enough sour cream, so added about another 1/2 a cup and it turned out great. Followed a suggestion and put a layer of onions at the bottom and alternated potato with orange kumara/sweet potato. Was a hit with family and friends.
