About this recipe: A super-easy meal that can be thrown together quickly. Tuna, peas, sweetcorn and carrots are topped with cheese, then baked to perfection. It's the perfect weeknight dinner.


Serves: 4 

  • 30g butter
  • 2 tablespoons flour
  • 350ml boiling water
  • 40g dry chicken noodle soup mix
  • 300g frozen peas, sweetcorn and carrot mix
  • 1 (400g) tin tuna, drained
  • 100g mature Cheddar cheese, grated

  1. Preheat oven to 180 C / Gas 4. Boil vegetables until tender, then drain and set aside.
  2. Melt butter in a large saucepan. Add flour and mix for 2 minutes, then stir in water and soup mix. Cook until the mixture thickens. Remove from heat.
  3. Add tuna and vegetables to the saucepan and mix. Transfer into a baking dish. Sprinkle with cheese. Bake in preheated oven for 20 minutes or until the cheese is melted and bubbly.
