Chicken Parmesan Sandwiches

About this recipe: This fantastic sandwich can be enjoyed anytime of the day. Breaded chicken is baked with tomato puree and Parmesan, then served in a sub roll.


Serves: 4 

  • 2 skinless chicken breasts fillets
  • 2 eggs
  • 110g Italian seasoned breadcrumbs
  • 500g tomato puree
  • 1 handful grated Parmesan cheese
  • 4 sub rolls

  1. Preheat oven to 180 C / Gas 4.
  2. Carefully slice each chicken breast in half horizontally.
  3. Beat together the eggs in one large bowl. In another bowl, fill with breadcrumbs.
  4. Take the first half of chicken breast and dip evenly in egg, then dredge in breadcrumbs. Lay breaded chicken on a baking tray and repeat with the remaining three pieces.
  5. Bake in preheated oven for 20 minutes, then pour over 1/4 of the tomato puree over each piece, completely covering them. Sprinkle with Parmesan cheese.
  6. Bake for an additional 10 minutes. Allow to cool a little, then serve each in a sub roll.
