About this recipe: A simple, yet delicious way of making use of tinned beans. They are simmered in a tangy tomato sauce. Serve as a side dish with chicken, pork, beef or fish.


Serves: 4 

  • 1 large onion, finely chopped
  • 2 cloves garlic, finely chopped
  • 2 tablespoons olive oil
  • 3/4 (400g) tin mixed beans, drained and rinsed
  • 75g tomato puree
  • 4 tablespoons red wine vinegar
  • 1 tablespoons dried mixed herbs
  • 100ml chicken stock
  • sea salt to taste
  • freshly ground black pepper to taste

  1. Heat olive oil in a medium saucepan over medium-low heat. Add the onion, stir to coat with the oil. Cover with the lid and sweat the onion until transparent, stirring occasionally.
  2. Add the garlic, saute for 30 seconds.
  3. Add mixed beans, stir and leave for 30 seconds to heat through.
  4. Stir in tomato puree, mixed herbs, red wine vinegar and chicken stock. Turn up heat and gently simmer for 15 minutes, covered. If the pan dries out, add a little hot water.
  5. Season with salt and black pepper, just before serving.
