No-bake lemon cheesecake

About this recipe: If you're having a party this is the recipe for you. An easy digestive biscuit base with a luscious lemon flavoured no-bake cheesecake filling that is exceptionally simple to make.

Serves: 7 

  • Base
  • 400g digestive biscuits
  • 125g butter or margarine
  • Filling
  • 200g Philadelphia cheese
  • 150ml cream
  • 75g caster sugar
  • 2 lemons, juiced

Prep:1hr  ›  Extra time:8hr chilling  ›  Ready in:9hr 

  1. Put biscuits in food processor and mix to fine pieces. Add butter and mix again. Put in a tin and leave to set.
  2. Mix cheese and cream until stiff peaks occur. Add sugar and lemon juice and beat till smooth.
  3. Place topping in the tin and let it set overnight in the refrigerator.
  4. Serve.

Altered ingredient amounts. When I first made this I found the biscuit base was too deep as the recipe doesn't say to press the biscuit down into the tin ... & as a result the cheese topping was too thin. I doubled the amounts of Philly,sugar,lemon juice & cream & used less biscuit. Either way it tastes delicious! - 29 Apr 2011


I really loved this easy to make cheesecake.When I made it the 2nd time,I used ginger snap biscuits for the base and added the lemon rind.Delicious - 11 Oct 2012


Was concerned by how runny topping was before i chilled finished cake, but it was soft & creamy & delicious once set. Also felt topping was too shallow compared to base so wd double up topping quantities next time. I added zest & every1 loved 10/10 from my 8yr old! - 09 Apr 2012
