Preheat oven to 180 C / Gas 4.
Cut off the top of the pumpkin and scrape out all the seeds. Place the butter and dark brown soft sugar inside the pumpkin and sprinkle with ground cinnamon. Put the pumpkin lid back on and place pumpkin in a baking dish with a little water in the bottom.
Bake at 180 C / Gas 4 for about 30 minutes or until tender. These can also be baked in the microwave on high for about 10 to 15 minutes.
Sugar pumpkins are smaller versions of the big orange pumpkins you find during Halloween. They are sweeter and have more flavour. Do not substitute in larger versions, these are essentially grown to be made into Jack-o-lanterns.
