About this recipe:A fantastic and easy recipe for celery soup. Celery, carrots and onion are boiled together in chicken stock, thickened and passed through a sieve before serving. You can also blitz the soup with the vegetables, if you prefer.
3 litres chicken stock
1.35kg celery, coarsely chopped
225g carrots, julienned
225g onions, chopped
125g plain flour
1 tablespoon salt
1 teaspoon ground white pepper
3 litres hot milk

Pour the chicken stock into a large stock pot and bring to the boil. Add the celery, carrots and onion. In a bowl, whisk together the flour, salt, pepper and milk; add to the pot along with the margarine. Boil for 10 minutes, then strain pass the mixture through a sieve.
This was so quick and easy to make, though my measurements were not too scientific. I was cooking for only 6. Rather than passing the vegetables through a sieve, I chose the other option and blended it all. It was delicious. - 01 Nov 2011
What a delicious soup. I sweated off the vegetables first for about 20 minutes then added the stock and simmered for 10 minutes. I added the milk, seasoning and a little single cream I had in the fridge at the end and then blitzed it all. Lovely soup, will definitely make it again. - 06 May 2014
