Easy onion soup

    This onion soup is super-easy to make. Onions are sauteed, then simmered with a meat stock and condensed soup. The resulting soup is delicious. Serve as a starter, snack or a main meal with a crusty bread roll.

    Serves: 8 

    • 30g margarine
    • 1.35kg onions, sliced
    • 900ml concentrated beef stock
    • 600ml concentrated chicken stock
    • 1 (295g) tin cream of mushroom condensed soup
    • 2 tablespoons plain flour
    • salt to taste
    • ground black pepper to taste

    Prep:10min  ›  Cook:25min  ›  Ready in:35min 

    1. Melt the margarine in a large stock pot. Add the onions and cook over medium heat until the onions are translucent and tender.
    2. Stir in the flour. Blend in the stocks and soup. Bring to the boil, then reduce to a simmer. Season to taste with salt and pepper.

    this was the most excellent onion soup ever!!!!! I followed it to a T and it wasn't all that creamy but used unsalted butter and condensed cream of mushroom soup with roasted garlic, added pepper but no salt. It was just so darn delicious, the onions were melting in my mouth they were so tender. I can say it wasn't that "creamy creamy" like I thought it would be but it was still excellent. So I added a dollup of sour cream, which added the creaminess to the soup...All in all and excellent filling soup and wished I had thought about adding some portabella mushrooms to it.
