About this recipe:This gingerbread doesn't contain any black treacle. The secret to this recipe is butterscotch Angel Delight! The resulting gingerbread men are perfectly spiced, with just the right amount of crunch.
In a medium bowl, cream together the dry butterscotch mix, butter and dark brown soft sugar until smooth. Stir in the egg. In a separate bowl, combine the flour, bicarbonate of soda, ginger and cinnamon; stir into the butterscotch mixture. Cover and chill dough until firm, about 1 hour.
Preheat the oven to 180 C / Gas 4. Grease baking trays. On a floured board, roll dough out to about 3mm thickness and cut into gingerbread men shapes. Place gingerbread men 5cm apart on the prepared baking trays.
Bake for 10 to 12 minutes in the preheated oven, until gingerbread men are golden at the edges. Cool on wire racks.
