Best quinoa salad

    A vegetarian quinoa salad that's perfect for packed lunches, picnics and barbecues. Make a big bowl of this on Sunday to have to hand throughout the week!

    Serves: 4 

    • 475ml water
    • 175g quinoa
    • 1 pinch salt
    • 4 tablespoons olive oil
    • 4 tablespoons lemon juice
    • 1 teaspoon prepared mustard
    • 3 tomatoes, seeded and diced
    • 1 cucumber, diced
    • 1 red or yellow pepper, diced
    • 1 bunch spring onions, chopped
    • 15g fresh mint, chopped
    • 15g fresh parsley, chopped
    • sea salt and freshly ground black pepper, to taste
    • 150g feta cheese, crumbled (optional)

    1. Bring a saucepan with 475ml water to the boil. Add quinoa and a pinch of salt. Reduce heat to low, cover and simmer for 15 minutes. Allow to cool to room temperature; fluff with a fork.
    2. Meanwhile, in a large bowl, combine remaining ingredients. Stir in cooled quinoa.

    Vegan notes

    To keep the salad vegan, skip the feta cheese.
