Special Tom Collins

    This recipe for Tom Collins is a special one - it has the addition of a dash of bitter. It's refreshing and perfect for a warm summer's day. Serve it at your next dinner party.

    Serves: 1 

    • 4 tablespoons gin
    • 4 tablespoons lemon juice
    • 2 tablespoons sugar cane syrup
    • 1 dash bitter
    • 1 cupful ice cubes
    • 4 tablespoons sparkling water, cold
    • 1 slice lemon, for garnish
    • 1 cocktail cherry

    1. Fill a cocktail shaker with ice. Pour in the gin, lemon juice, syrup and a dash of bitter. Cover and shake until the outside of the container is frosty, about 15 seconds. Strain into a highball glass full of ice. Top off with sparkling water and garnish with a lemon slice and cocktail cherry.

    A solid Tom Collins recipe. Omit the bitters if you don't have them. I use less lemon juice (1 ounce). Fresh lemon juice is best, but bottled will work in a pinch.
