Delicious pumpkin pie

    This delicious pumpkin pie is super-easy to make. The addition of custard powder adds to the creamy consistency of the filling. Perfect served as a dessert or a snack.

    Makes: 1 23cm round pumpkin pie

    • 1 (23cm) prepared shortcrust pastry case, baked
    • 1 (75g) pack instant custard powder
    • 4 tablespoons dark brown soft sugar
    • 1 1/4 teaspoons pumpkin pie spice (see note)
    • 375g pumpkin puree
    • 1 (397g) tin sweetened condensed milk
    • 1 egg, beaten
    • 150ml double cream, whipped

    1. In a large saucepan, combine custard powder, dark brown soft sugar and pumpkin pie spice. Mix well, then add pumpkin puree, condensed milk and egg. Whisk mixture until smooth, then cook over medium heat, stirring constantly, until mixture comes to the boil. Boil and stir 1 minute.
    2. Pour mixture into baked pastry case and chill. Garnish with whipped cream before serving.


    Pumpkin puree can be purchased online.

    Pumpkin pie spice:

    This can be made by combining 1/2 teaspoon ground cinnamon, 1/4 teaspoon ground ginger, 1/4 teaspoon ground nutmeg and 1/4 teaspoon ground allspice.

    Used different ingredients. Couldnt get Pumpkin to make this as it was out of Season..... and I wasnt prepared to wait to get Pumpkin puree by mail order. So I used Butternut Squash instead!!! Just as tasty  -  10 May 2011
