Avocado apple and raisin salad

    This salad is suprisingly good. It's made with ripe avocados, crunchy apples, honey, raisins and sunflower seeds. Serve as a side salad, snack, as lunch or dinner.

    Serves: 4 

    • 2 avocados, peeled, pitted and diced
    • 1 large red apple, cored and diced
    • 2 tablespoons honey
    • 80g raisins, soaked in water and drained
    • 1 tablespoon sunflower seeds

    1. In a medium bowl, combine the avocados, apple and raisins. Drizzle with honey and sprinkle with sunflower seeds.

    This was a nice refreshing treat on a hot day! The apples and avocado do go well together. I used crushed almonds instead of sunflower seeds and also threw in some dried cranberries just because they were sitting on the counter in front of me as I was making it.
