Perfect Brown Rice Salad

    A refreshing change from the humdrum pasta salad. Brown rice is cooked, then tossed with red onions, celery, cranberries and balsamic vinaigrette. Serve as a side dish.

    Serves: 4 

    • 475ml water
    • 190g brown rice
    • 4 tablespoons diced red onion
    • 1 stick celery, diced
    • 4 tablespoons dried cranberries
    • 125ml balsamic vinaigrette salad dressing
    • 1 tablespoon sugar

    Prep:15min  ›  Cook:1hr  ›  Extra time:2hr chilling  ›  Ready in:3hr15min 

    1. In a saucepan, bring water to the boil. Stir in rice, cover and reduce heat to low. Simmer for 45 to 60 minutes or until done.
    2. Transfer rice to a serving bowl and stir in onion, celery, cranberries, dressing and sugar. Cover, refrigerate and serve cold.

    Fantastic. Made this for a BBQ yesterday. Very simple to make and happily had all ingredients ready to hand. I made double the portion as 10 mouths to feed. Every last spoonful was eaten and my husband who hates cold rice dishes, had seconds! Just about to send the recipe to my veggie sister as she will love this .  -  02 Jul 2011
