Microwaved Apple and Pumpkin

    A wonderful dessert made with just five ingredients. It's simple and only requires a microwave to make. Apple chunks are layered with pumpkin puree, sweetener and spices.

    Serves: 2 

    • 4 teaspoons granular sweetener
    • 1 teaspoon pumpkin pie spice
    • 1 Granny Smith apple, peeled, cored and chopped
    • 4 tablespoons pumpkin puree
    • 2 tablespoons water

    1. Sprinkle 1 teaspoon sweetener 1/3 teaspoon pumpkin pie spice in the bottom of a microwave-safe bowl. Layer 1/4 of the apple pieces into the bowl; repeat. Spread the pumpkin over the apples. Sprinkle the remaining sweetener and pumpkin pie spice on the pumpkin. Top with the remaining apples. Pour the water over the mixture.
    2. Cook in microwave on high for 3 1/2 minutes, stirring every minute.


    Pumpkin pie spice mix can be made by mixing together 1/2 teaspoon cinnamon, 1/4 teaspoon ground ginger, 1/8 teaspoon ground nutmeg and 1/8 teaspoon ground allspice or cloves.

    Pumpkin puree can be purchased online.

    This was very good and extremely easy. I found the pumpkin pie spice too intense so the second time I made it I used half and added a little more sweetener and it was perfect.After i microwavedit I poured the warm mixture over crushed grahm crackers and let it "set" for a few minutes and added a little fat free cool whip on top-- like hot pie!!  -  05 Mar 2009  (Review from Allrecipes US | Canada)


    This was really easy to make and it turned out very good; the apples balance the richness of the pumpkin nicely. One thing to watch out for is the pumpkin bubbling over the sides of the dish, so I suggest either using a bigger dish or stirring more frequently after about 2 1/2 minutes. You could probably substitute 4 teaspoons of sugar (brown for extra flavor) for the sweetener if you don't have any on hand. Overall, a great snack recipe.     This is so easy and fast to make. Based on the effort it takes to make, the flavor is very good. I'll be making it again, but may add the brown sugar that others suggested as well as some low fat cool whip or vanilla ice cream.
