Apple, cranberry and pear crumble

    This recipe takes the traditonal apple crumble to a new dimension. Apples, cranberries and pears are topped with a buttery and oaty crumble, before being baked to perfection.

    Serves: 8 

    • 2 Gala apples, peeled, cored and cubed
    • 2 Comice pears, peeled, cored and cubed
    • 60g dried cranberries
    • 1 tablespoon plain flour
    • 2 tablespoons honey
    • 1 1/2 tablespoons lemon juice
    • 65g plain flour
    • 110g dark brown soft sugar
    • 50g quick oats
    • 4 tablespoons ground walnuts
    • 115g unsalted butter

    1. Preheat oven to 190 C / Gas 5. Lightly grease a 20cm round baking dish.
    2. Mix the apples, pears, cranberries, 1 tablespoon flour, honey and lemon juice in the prepared dish.
    3. In a bowl, mix 65g flour, dark brown soft sugar, oats, walnuts and butter to the consistency of coarse crumbs. Sprinkle loosely over the fruit mixture.
    4. Bake 45 minutes in the preheated oven or until brown and crisp on top.

    Cook's note

    To grind walnuts, simply place them into the bowl of a food processor and blitz until ground.

    Tried this without the cranberries it is georgeous the topping is divine I used chopped hazelnuts instead of walnuts  -  23 Feb 2014

    Complete silence descended on the table as folks dug in to this dessert! It was so delicious for fall. I changed a couple things--added 2 extra pears, so therefore increased the rest of the ingredients (except apples) by 50%. I didn't have walnuts, so used pecans. One tip is to mix the topping ingredients in the food processor--just pulse until it looks like coarse crumbs--fast and easy.  -  24 Oct 2005  (Review from Allrecipes US | Canada)
