About this recipe: This lentil stew is not only suitable for vegetarians, but it's also simple to prepare and is delicious. Lentils are simmered together with tomatoes, onions, carrots, apples, peas and seasoning.

Serves: 4 

  • 190g dry lentils
  • 1 litre water
  • 1 cube vegetable stock
  • 3 medium tomatoes, peeled and diced
  • 1 large onion, diced
  • 1 carrot, sliced
  • 1 medium apple, peeled, cored and diced
  • 75g frozen peas
  • 1 large clove garlic
  • 1 tablespoon olive oil
  • 4 tablespoons barbecue sauce
  • 1/2 teaspoon paprika
  • salt and pepper to taste

  1. Place the lentils and water in a large saucepan and mix in the vegetable stock cube. Bring to the boil, reduce heat to low and simmer 20 minutes.
  2. Stir the tomatoes, onion, carrot, apple, peas, garlic, olive oil, barbecue sauce and paprika into the pan. Continue to simmer 20 minutes. Season with salt and pepper to serve.

This is a nutritious and low-fat meal that is suitable for vegetarians and vegans. I think a lot depends on the type of barbecue sauce you use, I had 'Newman's Own' and I felt I could have added more than the 4 tablespoons in the recipe. If I was making this again I would add another stock cube too, but otherwise it was a healthy and warming autumn supper! - 15 Sep 2012
