    About this recipe: Large sea scallops wrapped in prosciutto, basted with butter, then barbecued.

    Serves: 8 

    • 1kg (2 lb) shelled, large sea scallops
    • 225g (8 oz) prosciutto, thinly sliced
    • 100g (4 oz) butter, melted
    • cocktail sticks, soaked in water

    Prep:15min  ›  Cook:13min  ›  Ready in:28min 

    1. Preheat barbecue for medium-high heat.
    2. Wrap each scallop with a thin slice of prosciutto, and secure with a cocktail stick.
    3. Lightly oil barbecue cooking grate. Arrange scallops on the grate, and baste with butter. Cook for 5 minutes, turn, and baste with butter. Cook for another 8 minutes, or until opaque.
