Slow cooker bacon wrapped pork chops

    A delicious and tender pork chop recipe. Pork chops are wrapped in bacon and grilled, before being cooked in a slow cooker with a sweet mustard sauce and pineapple chunks.

    Serves: 6 

    • 6 (115g) pork chops
    • 12 rashers streaky bacon
    • 350g tomato based chilli sauce
    • 3 tablespoons dark brown soft sugar
    • 2 tablespoons Dijon mustard
    • 1/2 (425g) tin pineapple chunks, drained

    1. Preheat the grill and set the grill rack about 15cm from the heat source.
    2. Wrap each pork chop in 2 bacon rashers to completely cover the pork chop and secure with cocktail sticks. Place the wrapped chops onto a grill pan and grill until browned, about 5 minutes per side.
    3. Mix together the chilli sauce, dark brown soft sugar and Dijon mustard in a bowl. Place the browned pork chops into the bottom of a slow cooker and pour the chilli sauce mixture over the chops. Spread pineapple chunks over the chops, set the cooker to Low and cook until very tender, about 6 hours.

    I have 4 kids who all have their own culinary opinions. They all loved it as well as the husband and myself. Next time I will try it boneless just because I was a little concerned someone might bite into a bone. I hope it doesn't alter the favor to much.     I wrapped these completely in bacon and browned them in the skillet for 4 min each side. (Disconnet smoke alarm) Simmered them for 1 hour in a combination of BARBQ sauce, Pineapple juice with chunks and a can of diced tomatoes with green chilies. Flipped them after 30 minutes.
