A wonderful baked brussels sprouts recipe. Brussels sprouts are dotted with butter, pine nuts and seasoned, then baked, before being garnished with blue cheese.

    Serves: 6

    • 90g Brussels sprouts, ends trimmed and yellow leaves removed
    • 115g butter, cut into pieces
    • 1 teaspoon sea salt
    • 1/2 teaspoon ground black pepper
    • 4 tablespoons fresh lemon juice
    • 4 tablespoons pine nuts
    • 70g blue cheese, crumbled

    Prep:10min  ›  Cook:25min  ›  Ready in:35min

    1. Preheat the oven to 180 C / Gas 4.
    2. Place the Brussels sprouts into a casserole dish. Arrange pieces of butter on top of the sprouts. Season with salt, pepper and lemon juice. Cover with the lid.
    3. Bake for 25 minutes in the preheated oven or until sprouts are just barely tender. Stir now and then to keep them from sticking. During the last 10 minutes, sprinkle the pine nuts over the sprouts and remove the lid. When the sprouts are done, sprinkle blue cheese over them before serving.

I didn't have the pine nuts or feta cheese but followed the recipe otherwise. I cut the sprouts in half and they cooked just fine in the 25 minutes. They are wonderful, we all loved them this way.  -  12 Mar 2008  (Review from Allrecipes US | Canada)

My 6 and 4 year old nephews asked for three servings of this. Amazing! They did cook for an extra ten minutes or so. I was just hoping to introduce brussels sprouts to the family in a more delicous way than I remember them, but these were fantastic! I always hated these as a kid; I guess they just needed a good recipe!  -  30 Sep 2008  (Review from Allrecipes US | Canada)

Instead of boiling them to pre-cook a bit, try cutting into quarters and steaming briefly--keeps the taste and color better. We leave out the Blue cheeze cuz at my house we think it tastes like feet--we use Havardi and everyone raves. A surprising every-day veggie and SO diferent from our mothers oookey sprouts.  -  13 Jan 2008  (Review from Allrecipes US | Canada)
