Cannellini Beans, Mushrooms and Barley

About this recipe: A delicious vegetarian dish made with pearl barley, onions, garlic, mushrooms and cannellini beans. Serve as is or as a side dish with whatever you fancy. Enjoy!


Serves: 6 

  • 1 teaspoon olive oil
  • 300g fresh mushrooms, sliced
  • 1 onion, chopped
  • 60g celery, chopped
  • 2 cloves garlic, finely chopped
  • 90g uncooked pearl barley
  • 750ml vegetable stock
  • 1 (410g) tin cannellini, drained

  1. Heat oil in a medium saucepan over medium heat and stir in mushrooms, onion, celery and garlic. Saute until tender.
  2. Mix barley and vegetable stock into the saucepan. Bring to the boil, cover and reduce heat. Simmer 45 to 50 minutes, until barley is tender.
  3. Stir cannellini beans into the barley mixture. Continue cooking about 5 minutes, until beans are heated.
