Fresh basil sauce

    If you love the flavour and aroma of basil, this sauce is for you. Fresh basil is pounded together with salt, olive oil and balsamic vinegar. Use to garnish soups or serve with white fish or chicken.

    Serves: 4 

    • 1 large bunch basil, leaves picked from stems
    • 1/4 teaspoon salt or to taste
    • 2 tablespoons extra-virgin olive oil
    • 1 teaspoon balsamic vinegar

    1. Make a sauce by crushing basil leaves and salt with a mortar and pestle. Stir in the olive oil and balsamic vinegar.

    Quick and easy, yet tasty. This makes a very small amount and is perfect for add to slices of french or sour dough bread before I grill them. Also, this is great on pasta with or without marinara. Phil's suggestion of swirling it into tomatos soup is great.     Basil puree saves the day! My kids were disappointed because I had no parmesan or nuts to make pesto, but then, I found this! We made it to fit the amount of basil I had (probably less than this recipe intended), and it was a great sauce for our home made spinach noodles!
