Beef, bacon and four bean casserole

    A wonderfully hearty dish packed full of protein. Bacon, beef mince, onions, baked beans, kidney beans, butter beans and black beans are baked together, to create this delicious casserole. You can also cook this dish in a slow cooker. Mix all of the ingredients together and cook on low for 4 to 6 hours.

    Ingredients
    Serves: 12 

    • 335g streaky bacon
    • 450g minced beef
    • 2 large onions, chopped
    • 2 (275g) bottles honey barbecue sauce
    • 4 (420g) tins baked beans and sausages, sausages cut up into small pieces
    • 1 (400g) tin kidney beans, rinsed and drained
    • 1 (400g) tin butter beans, rinsed and drained
    • 1 (400g) tin black beans, rinsed and drained
    • 110g dark brown soft sugar
    • 3 tablespoons cider vinegar
    • 1 teaspoon salt
    • 1/2 teaspoon ground black pepper

    Method

    1. Preheat oven to 180 C / Gas 4.
    2. Place the bacon in a large, deep frying pan and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain the bacon slices on a kitchen towel-lined plate. Let cool and crumble.
    3. Place the minced beef and onions into a large frying pan over medium heat and cook and stir until the meat is no longer pink, breaking the meat apart as it cooks, about 10 minutes. Drain any excess fat. Transfer the beef and onion mixture into a large casserole dish. Stir in the crumbled bacon, honey barbecue sauce, sausages and beans, kidney beans, butter beans, black beans, dark brown soft sugar, cider vinegar, salt and pepper.
    4. Cover and bake in the preheated oven until bubbling, about 1 hour.

    OK, I know I'm not supposed to review if I changed the recipe, but these were THE MOST amazing beans I have had outside of an authentic BBQ restaurant. First of all, the only things that I changed were 1) I omitted the meat because I wanted a vegetarian-friendly side dish, and 2) I just dumped everything in the slow cooker and let it cook on low for a few hours.
