    About this recipe: A simple, yet delicious beetroot dish. Sliced beetroots are simmered with lemon juice, salt, brown sugar, apple and cornflour. Serve as a wonderful side dish with whatever you fancy.

    Serves: 4 

    • 125ml water
    • 300g vacuum packed beetroot, sliced
    • 2 teaspoons lemon juice
    • 1/2 teaspoon salt
    • 1 tablespoon dark brown soft sugar
    • 1 teaspoon cornflour
    • 1 tart green apple, peeled and sliced

    1. In a large frying pan over medium heat, combine 125ml water, lemon juice, salt, dark brown soft sugar and cornflour; mix well. Cook, stirring, until thickened and clear. Stir in beetroot and apple. Reduce heat to low and gently simmer for 15 minutes.
