In a large frying pan over medium heat, combine 125ml water, lemon juice, salt, dark brown soft sugar and cornflour; mix well. Cook, stirring, until thickened and clear. Stir in beetroot and apple. Reduce heat to low and gently simmer for 15 minutes.
