    About this recipe: There are hundreds of variations you can make, but the main point of this soup is to get lots of natural fibre - making you feel full for longer.

    Ingredients
    Serves: 8 

    • 1 medium head cabbage, chopped
    • 1 onion, chopped
    • 3 large carrots, chopped
    • 3 stalks celery, chopped
    • 3 tomatoes, chopped
    • 450g (16 oz) frozen green beans
    • 2 sachets onion soup mix, such as Knorr
    • 1.75L (3 pints) water

    Method
    Prep:20min  ›  Cook:30min  ›  Ready in:50min 

    1. Combine all ingredients in a large stockpot. Bring to the boil. Reduce heat, and simmer until the vegetables are tender.

    Used different ingredients. To be honest I tweaked this beyond all recognition! I used this recipe as the base, but as I grow my own veg I just used what was available from the garden: I used red cabbage, leeks, borlotti beans, chard, onions & carrots. I also used VICTORIAQUINN2146's suggestion of the tinned tomatoes as well as SUZPEM's suggestion of thyme, oregano, garlic & extra virgin olive oil. Oh and I also added a dash of Tabasco and a couple of shakes of Worcester Sauce. The net result was delicious, if nothing like the original!! (Sorry PEGW). I do think that it could do with some extra depth however, perhaps a beef stock cube or maybe a squeeze of tomato puree if you wanted to keep it vegetarian. - 09 Oct 2009

    Used different ingredients. Peg..This is delicious!! My partner gobbled it up and he is not a veggie fan! I also substituted tinned tomatoes for fresh and, as you suggested, added a variety of vegtables I like. I added lots of pepper and some vegtable stock to spice it up a bit. What I really liked was that it was simple and I had everything I needed without having to go to the supermarket. Hope this helps a stone melt away! - 24 Jul 2008

    I really like this recipe. I make it and put 1 serving portions in a freezer bag then reheat them about 1-2 times a week to help cut down on the calories Im sure Im loading up on durring the week. Its good and it makes me full without all the unwanted calories! - 24 Jul 2008
