About this recipe: A refreshingly different and healthy recipe for chips. Butternut squash is sliced into matchsticks, tossed with salt and roasted until brown and crisp. Serve as a snack or side dish for lunch or dinner.

    Serves: 4

    • 1 (900g) butternut squash, halved and seeded
    • salt to taste

    Prep:15min  ›  Cook:20min  ›  Ready in:35min

    1. Preheat the oven to 220 C / Gas 7.
    2. Use a sharp knife to carefully cut away the peel from the squash. Cut the squash into sticks. Arrange squash pieces on a baking tray and season with salt.
    3. Bake for 20 minutes in the preheated oven, turning the fries over halfway through baking. Fries are done when they are starting to brown on the edges and become crispy.
