Cabbage and portabello saute

    A simple, yet delicious vegetable side dish, made by sauteing cabbage and portabello mushrooms together. Serve for lunch or dinner, with whatever you fancy.

    Serves: 4 

    • 1/2 tablespoon margarine
    • 1/2 tablespoon olive oil
    • 1/2 medium head cabbage, thickly sliced
    • 2 portabello mushroom caps, thickly sliced
    • 2 pinches sea salt or to taste
    • ground black pepper to taste
    • garlic granules to taste

    1. Melt the margarine with the olive oil in a large frying pan over medium-high heat. Cook and stir the cabbage in the margarine until soft, about 5 minutes; season with salt, pepper and garlic granules. Add the mushrooms; continue cooking, stirring frequently, until mushrooms are tender.

    Made this for a family get together recently and it was a big hit. I made a couple of small revisions. Sauteed the cabbage in olive oil instead of boiling it, adding onion as the cabbage started to get tender and the mushrooms once the onions started getting translucent.
