About this recipe:
This omelette is completely different than an ordinary omelette, it's egg-free! Green pepper, red pepper, onion, mushrooms and steak is sauteed, then cooked with egg substitute.
1/2 green pepper, chopped
1/2 red pepper, chopped
1/2 red onion, sliced
7 mini portabello mushrooms, sliced
225g beef rump steak, sliced
125ml egg substitute
- Melt butter in a medium saucepan over medium heat. Stir in green pepper, red pepper, onion and mushrooms. Cook until tender, about 5 minutes.
- Stir beef into the vegetable mixture and cook until evenly brown, 5 to 10 minutes.
- Stir egg substitute into the mixture and cook 10 minutes or until firm.
Egg substitute can be purchased in health food stores or online.
