Microwaved Acorn Squash

    A deliciously simple and hassle-free dish. Acorn squash is cooked in the microwave with butter and dark brown soft sugar. It's sweet enough to serve as a dessert or a side dish with anything you fancy.

    Serves: 4 

    • 1 acorn squash, halved and seeded
    • 50g butter, divided
    • 4 tablespoons dark brown soft sugar, divided

    Prep:5min  ›  Cook:10min  ›  Ready in:15min 

    1. Place both halves of the squash cut side up on a microwave-safe plate or dish. Put 30g of butter and 2 tablespoons of dark brown soft sugar into the cavity of each half.
    2. Cook for 8 to 10 minutes in the microwave on full power. Rotate the squash a couple of times to ensure even cooking. When the flesh is soft, scoop out soft flesh with the sugar and butter and place it in a bowl. Mash it a little to blend the ingredients. Serve in a bowl or your could even serve it in the shells.


    If acorn squash is unavailable, use butternut squash instead.

    Very, very easy and husband-friendly. I added a tiny pinch of sweet pumpkin pie spices: cinnamon, nutmeg, mace, allspice, ginger, and cloves to the brown sugar, and then served it pooled in the shells, letting the diners mash it themselves to their heart's content.     SOOO Much faster than baking and just as tasty! My boyfriend would make this for me in the oven once in awhile but stopped because it took so long.
