    About this recipe: A delicious way to cook fresh pumpkin. Pumpkin is cooked with butter, sugar, maple syrup, fresh ginger and ground cinnamon. It's sweet, slightly spicy and very delicious.

    Serves: 12 

    • 60g unsalted butter
    • 350g fresh pumpkin, cut into 1.25cm cubes
    • 65g caster sugar
    • 240g maple syrup
    • 1 tablespoon finely chopped fresh ginger
    • 1/2 teaspoon ground cinnamon

    1. Melt the butter in a large frying pan over medium-low heat. Cook the pumpkin in the butter until tender, about 20 minutes. Add the sugar and stir until dissolved. Stir in the syrup, ginger and cinnamon; remove from heat and allow to cool. Transfer to a bowl and cover. Refrigerate at least 2 hours before serving.
