About this recipe: This is a superb soup recipe. It's creamy and cheesy. If you love cauliflower cheese, you will love this soup. It's the perfect comfort food for winter. Cauliflower is simmered with potatoes, onion, ham and cheese. Enjoy with crusty bread rolls.


Serves: 12 

  • 1 head cauliflower, broken into small florets
  • 675g potatoes, peeled and diced
  • 1 (300g) tin sliced mushrooms, drained
  • 1/2 onion, finely chopped
  • 675g cooked ham, diced
  • 900g Kraft processed cheese sliceds, unwrapped and chopped

  1. In a large pot, combine cauliflower and potatoes with just enough water to cover. Bring to the boil, then reduce heat and simmer until tender but not mushy, 10 to 15 minutes.
  2. Drain off about 1/4 of the water. Stir in mushrooms, onion, ham and cheese. Cook, stirring, until cheese is melted and mixture is heated through, about 10 minutes.

I cooked the onion with a bit a oil to get it started. Added one rib of celery and one finely diced carrot (nice way to sneak more veg in) Added the potatoes & Cauliflower and instead of water I used boxed chicken broth to cover (about a litre) Cooked all that down, then used a hand blender to combine. Then added the ham and cheese. I used 6 slices of cheese which is quite a bit less than called for but it worked well. The kids loved this soup. The littlest one ate 3 bowls full.
