About this recipe: If you love blue cheese, this highly flavoured celery soup is for you. Celery is simmered with Stilton and then pureed until smooth. Serve with crumbled Stilton and crusty bread.

Serves: 4 

  • 2 tablespoons margarine
  • 1 onion, thinly sliced
  • 100g celery chopped
  • 1 litre water
  • 100g Stilton cheese, crumbed and divided
  • 4 sprigs watercress, for garnish

  1. Melt the margarine in a large pot over medium low heat. Add the onions and saute for 10 minutes or until onion is translucent.
  2. Add the celery and the water. Cover and bring to the boil, then reduce heat to low and simmer for 30 minutes or until celery is soft.
  3. Add 2/3 of the Stilton cheese to the soup and mix well. Puree the soup in small batches in a liquidiser or food processor and return it to the pot. Season with salt and pepper to taste.
  4. Pour into individual bowls, sprinkle with the remaining Stilton and garnish with the watercress.
