Cheese and Leek Toasties

    A delicious and simple sandwich recipe. Sourdough sandwiches with a leek, tomato and Cheddar filling, are pan-fried until toasted. Serve with a side salad for a substantial lunch.

    Serves: 2 

    • 4 slices sourdough bread
    • 50g butter, room temperature
    • 3 small leeks, white part only, julienned
    • 90g Cheddar cheese, grated
    • 4 slices firm tomatoes
    • 2 tablespoons mayonnaise

    Prep:15min  ›  Cook:5min  ›  Ready in:20min 

    1. Heat a frying pan on medium heat. Spread butter evenly on one side of each bread slice; place two slices, butter side down, in the pan. Top with leeks, half of the cheese, the tomato slices, then the remaining cheese. Spread the mayonnaise on the unbuttered side of the remaining two bread slices; place mayonnaise side down on the sandwich. Toast until golden brown, then flip and brown the other side.

    Great variation from the typical grilled cheese sandwich. Saute the leeks to cut down on the "onion" flavor of the leek and it's a great sandwich!  -  04 Mar 2007  (Review from Allrecipes US | Canada)


    This is a super rich sandwich! All that yummy cheese, the buttered bread... wow! I love leeks, I love cheese, I love butter, I love bread. Bring them all together and it's almost TOO rich!
