Best Cheesy Broccoli Soup

    A delicious soup, that's also super-easy to make. Broccoli is simmered with celery, onion, carrot and cheese. Serve with crusty bread rolls for lunch or dinner.

    Makes: 6 - 8 servings

    • 1 onion, chopped
    • 90g margarine
    • 5 tablespoons plain flour
    • salt and pepper to taste
    • 1 litre milk
    • 750ml chicken stock
    • 1 carrot, grated
    • 100g broccoli florets
    • 65g celery, chopped
    • 450g Kraft processed cheese slices, unwrapped and chopped

    1. In a large saucepan on medium high heat, saute the onions in the margarine until tender. Add the flour and salt and pepper to taste. Mix until smooth. Add the milk slowly, until mixture is thick and bubbling.
    2. In a smaller saucepan, bring the chicken stock to the boil. Add the carrot, celery and broccoli. Cook about 5 minutes or until tender. Combine the stock mixture with the milk mixture and stir until fully blended.
    3. Add the cheese. Allow soup to heat over medium heat until cheese is melted. Important: DO NOT let the soup boil because the cheese will separate and curdle the soup. Serve hot and enjoy!

    WOW! My family and friends loved this. Though I used the basic recipe, I have to admit to a few changes. I skipped the carrots and celery, and just added more broccoli, added a bit of garlic powder, and used 8 ounces of shredded chedder cheese instead of the processed cheese.     I've never had the urge to publicly rate/review a recipe before (& I visit this site regularly!) until now. I made this soup with my 3 1/2 yr old and we absolutely loved it! It has the perfect amount of cheese without tasting "cheesy" and just right consistency. I used a large bag of frozen broccoli & cooked it with the celery & carrots (which I just chopped) according to the package directions and it turned out great!
