    About this recipe: This is a delicious and highly flavoured bruschetta dish. Toasted focaccia is topped with grilled chicken, feta cheese, sun-dried tomatoes and Italian dressing. Perfect for a dinner party, as appetisers or party food.

    Serves: 8 

    • 2 skinless, boneless chicken breast fillets
    • 300ml Italian dressing, divided
    • 125g fresh spinach, torn
    • 85g feta cheese, crumbled
    • 8 sun-dried tomatoes, packed without oil, chopped
    • 450g focaccia bread, cut into 1.25cm thick slices
    • 4 tablespoons olive oil

    1. Place the chicken and 250ml salad dressing in a bowl. Cover and marinate at least 3 hours in the refrigerator.
    2. Preheat the barbecue for high heat.
    3. Lightly oil the barbecue cooking grate. Discard dressing used for marinating and barbecue chicken 7 minutes per side or until juices run clear. Cool and shred using two forks.
    4. In a large bowl, mix the cooked chicken, spinach, feta cheese, sun-dried tomatoes and remaining dressing.
    5. Brush the focaccia bread with olive oil; cook 1 minute per side on the prepared barbecue or until lightly toasted. Place portions of the chicken mixture on the toasted focaccia to serve.
