Classic chicken and noodle soup

    A simple and super-easy soup recipe. Chicken is simmered with garlic, onions and spaghetti. Delicious for those cold winter months. Serve with fresh crusty bread.

    Makes: 10 - 12 servings

    • 675g boneless, skinless chicken meat
    • 225g dry spaghetti
    • 4 cloves garlic
    • 4 tablespoons chopped onion
    • salt to taste
    • 3 litres water
    • 3 tablespoons olive oil

    Prep:10min  ›  Cook:1hr  ›  Extra time:1hr10min  ›  Ready in:2hr20min 

    1. In a large pot, bring the water to the boil. Add the salt and olive oil.
    2. Chop up the chicken and add it with the onion and garlic to the pot.
    3. Break the spaghetti into small pieces, no longer than half the size of your small finger; add to the pot. Stir. Let simmer over medium heat for 30 to 45 minutes.

    I added a chicken stock cube to this for a little more flavour. and if you add a small sprinkling of instant mash or corn starch it takes away the wateryness. it was very nice in the end  -  15 Nov 2011


    I followed the instructions to the 'T' but it turned out a little watery and VERY bland with almost no flavour at all. I'm very regretful I wasted £5.50 on the chicken for this recipe  -  03 Dec 2010


    I added couple stock cubes,pepper&fresh parsley. Thickend it up with a small amount of corn flour. It was fab with a few tweaks.  -  06 Jan 2014
