This recipe is a great way to used tinned or leftover salmon, and is easily adapted to include whatever spices you like.

Ingredients

Serves: 4
  • 1 (213g) tin salmon, drained and flaked
  • 1 egg, beaten
  • 1 tablespoon olive oil
  • 2 spring onions, finely chopped
  • 150g (5 oz) dried breadcrumbs
  • salt and pepper to taste

Preparation method

Prep: 10 mins | Cook: 10 mins
1.
Preheat oven to 190 C / Gas mark 5.
2.
In a medium bowl, mix together salmon, egg, olive oil, spring onions and 75g breadcrumbs. Season with salt and pepper. Form mixture into 8 patties. Coat patties with remaining breadcrumbs, and arrange in a single layer on a baking tray.
3.
Bake 10 minutes in the preheated oven, turning once, or until golden brown on both sides.

Really awesome :D However, I used the tin salmon and it didn't really taste the best. Use fresh salmon every time and it tastes amazing!!

Yum is all I can say! I love these and they are a regular in my house, especially useful when you have an assistant to do the messy bit! Lovely flavours, I use a bit less bread but that's the only change, lovely with watercress and sweet chilli dipping sauce in a pitta! Thanks!!!

I made these last night and they are soooo delicious!!!I will def be making them on a regular basis. I had mine with sweet chilli sauce! Very meaty and very tasty!!!

i was taken in by the fact that it's salmon, and that it only had 6 ingredients. after taking them out of the oven, i pan-fried for about 30 seconds on each side. got a "very tasty" from my boyfriend. i will definitely make these again!

Altered ingredient amounts. Use two tins of salmon instead of one. Add garlic. Also add onions and green peppers. I make a sauce with mayo, lime juice & dill for dipping. Like I said, these come out consistently fantastic.

These are super easy & super delicious! I have made these more than a dozen times - they come out wonderful each time. I have served these at dinner parties with many compliments & my husband asks me to make these at least once a week!

Easy and yummy! I decided to make a batch of these and bring them to work since I am the only one in the family that eats fish. Everyone who tried it loved it. The dipping sauce (see tweak) went very well with it. I will make these for the party I'm having next week! Thank you!
