Chicken and Tomato Soup

    A delicious and relatively cheap meal to make. Chicken drumsticks are fried and then simmered in tomato soup, with green peppers and red onion. Perfect with a crusty bread roll.

    Serves: 6 

    • 1 litre oil for frying
    • 1.35kg chicken drumsticks
    • 5 (295g) tins tomato condensed soup
    • 1.5 litres water
    • 2 green peppers, diced
    • 1 large red onion, diced

    1. In a large, heavy frying pan, heat oil to 190 degrees C. Fry the drumsticks until lightly browned and no longer pink on the inside. Remove from heat and drain off excess oil.
    2. In a large saucepan, bring the tomato soup and water to the boil. Reduce heat and simmer. Mix in the drumsticks, green peppers and red onion. Simmer approximately 15 minutes.

    I had a few left over oven roasted drumsticks, so I didn't need to fry them. I threw them together with the soup, water and vegtables, boiled (it didnt ruin my pot!) and it came out just fine.
