1.2 litres water
415ml chicken stock
1 skinless, boneless chicken breast fillets, cut into cubes
3 carrots, chopped
1 onion, chopped
3 sticks celery, chopped
2 cubes chicken stock
65g uncooked white rice
salt and pepper to taste

In a large saucepan over high heat, combine 1.2 litres water and the chicken stock and bring to the boil. Add the chicken, carrots, onion, celery and stock cubes and reduce heat to low. Cover and simmer for about 15 minutes or until the vegetables are soft.
Add more water as necessary. Add the rice and allow to simmer for another 15 minutes or until the rice is tender. Add salt and pepper to taste.
