Cheesy broccoli and chicken soup

    This is a super-creamy soup. Chicken is simmered with a variety of condensed soups, cheese, milk and mushrooms. It's delightful when served with crusty bread. Perfect for those cold winter months.

    Serves: 10 

    • 1 large onion, diced
    • 115g butter
    • 1 (295g) tin cream of chicken condensed soup
    • 1 (295g) tin cream of mushroom condensed soup
    • 1 (295g) tin cream of celery condensed soup
    • 575g frozen broccoli florets, thawed
    • 300g cooked chicken, cut into chunks
    • 900g processed cheese, chopped
    • 1 1/2 (300g) tins sliced mushrooms, drained
    • 1 litre milk

    1. In a large soup pot over medium heat, cook onion in butter until onion is translucent. Stir in cream of chicken, cream of mushroom, cream of celery, broccoli, chicken, processed cheese, mushrooms and milk. Cook, stirring frequently, until cheese is melted and broccoli is tender, 10 to 20 minutes. Serve at once.
